Los Conejos and Rail Spur celebrates Cinco de Mayo

CHEYENNE, Wyo. (Wyoming News Now) - As many might not know, Cinco de Mayo is a historical celebration of Mexico’s victory over the French at the battle of La Puebla in 1862.

But for most Americans, it’s just an excuse to have delicious Mexican food and great Tequila.

We’re here at Rail Spur to celebrate Cinco de Mayo, and we’re here with the owner Juan to mix up some Cinco de Mayo drinks.

What are we mixing up today?

Well, we’re going to be mixing up a “Number Juan” tequila margarita today.

Nice.

We’re going to do a little bit of lime juice, of course, our Tequila, agave syrup and Cointreau orange liquor. Give it a good shake. There we go.

Ok, let’s give it a try, alright. Salud. Really good.

We’re going to move on to the food, so let’s go.

We’re here in the Los Conejos food truck with Seth, the owner.

We’re going to be putting together some food. Tell us what we’re going to be doing today.

Today we’re going to be preparing some authentic birria tacos.

We have some guajillo red oil; we have authentic birria pork. We have some corn tortillas, cilantro, onion and some birria broth that we’ve been brewing.

We’re going to go ahead and slap them on the flat top. Then we’ll add some guajillo oil to give them that nice red color.

Is that super spicy?

It doesn’t have too much flavor to it, just a real smokey flavor, so we’ll kind of let those crisp up for a minute.

Then we’re going to take some of our barbacoa and slap it all the flat top, and we’re going to add some of our birria broth to that, too and give it some more flavor.

Then we’re going to give them a little fold.

We’re back with both the owners, Seth and Juan.

So tell us, how long have you guys been in this business? How long has the restaurant been open.... the food truck open?

We opened up a business together. Today we’re celebrating the Los Conejos third anniversary, and Rail Spurs has been open since New Year’s.

The best part for me is to see our friends and our community. They come in and spend time together enjoying themselves. That’s my favorite part.

Well, come down to Rail Spurs and Los Conejos for some authentic Cinco de Mayo drinks and food.

The party’s going to happen pretty much all night. Everyone is invited, and everyone’s welcome.

Rail Spur and Los Conejos will have drink and food specials for Cinco.

They will be open till 2 am, with drink and food specials running till 9 pm.

There will also be a car show featuring low riders starting at 4 pm on Friday.

The whole event is open to families and the public.

Additionally, they have a coffee bar and specials every day, and the owners said they plan on taking their food truck across Wyoming during the summer. So keep an eye out for them.
